Roast Chicken thighs (3), Piquillo Pepper salsa, Radicchio
Dietary notes: Gluten free. Dairy free.
Pre-heat oven to 220 degrees. Place the chicken
thighs skin side down on a piece of greaseproof paper on a tray, place in the oven
and cook for 8 minutes, turn the thighs over and then bake for a further 6 minutes
depending on your oven. To check if its ready place a skewer in the centre of thigh
and make sure its hot. While the chicken is cooking heat up sauce in pot or
microwave. Dress radicchio in a bowl with olive oil.
To plate put the sauce in serving bowl/plate first, then chicken thighs, top with
salad and drizzle with olive oil.
