Txistorra (Basque Chorizo), Buttered Zucchini, White Bean, Piquillo Pepper
Dietary: Contain gluten, contains dairy.
Pre-heat oven to 220 degrees. Place the chorizo on a
piece of greaseproof paper on a tray, place in the oven and cook for 8 minutes,
turn over and then cook for a further 6 minutes depending on your oven. To check
if its cooked use a skewer to check for clear liquid, it should be firm to touch and
make sure its hot. While the chorizo is cooking, place the butter and zucchini in a
small pot, place a lid on and steam/cook until zucchini is tender.
At the same time heat the beans in the bag in a pot of boiling water.
Or microwave if you have one.
To plate put the zucchini in serving bowl/plate first with a small amount of the
butter liquid, then chorizo making sure to remove the skewer holding it together,
top with the beans and drizzle with olive oil.
